		<description><![CDATA[So&#8230; I&#8217;ve been a busy girl, neglecting my cyber world. I&#8217;ve been feeling very ill for almost a year. I&#8217;ve had extreme fatigue, pain in my joints, abdominal pain, hair loss, gross skin outbursts (acne on steroids), weight gain, and difficulty concentrating. 			<content:encoded><![CDATA[<p>So&#8230; I&#8217;ve been a busy girl, neglecting my cyber world. I&#8217;ve been feeling very ill for almost a year. I&#8217;ve had extreme fatigue, pain in my joints, abdominal pain, hair loss, gross skin outbursts (acne on steroids), weight gain, and difficulty concentrating. Basically, I&#8217;ve been a BIG MESS. </p>
<p>I wasn&#8217;t the most committed to eating or exercise because I was just too exhausted. Then I decided let&#8217;s back track and see what I&#8217;m doing to find out what the hell is going on with this body of mine. So I started with diet. Maybe I have a few food allergies I never noticed. I started taking certain foods away. The first was beef, pork, and chicken. I instantly started to feel a little different in a good way. Next I took out seafood. I started feeling even better. I also started eating much less do to the increase in my veggie content and increase in some really tasty grains, like millet, quinoa, short grain brown rice, and Mochi. </p>
<p>I started loosing a little weight due to the obvious decrease in calories. My body was feeling less sluggish but still not a huge leap better. Then I decided lets go Vegan. Then BAM I felt great!!! No dairy or embryos looked great on me. I had so much more energy and even slept better. Wow!!! </p>
<p>I decided to add little things into my diet to see if there were triggers for any of my symptoms. I hadn&#8217;t noticed but I wasn&#8217;t eating pasta. So I tried that and I got the worse abdominal pains. I noticed that grilled cheese sandwiches did the same thing. I  was no inpatient and went to the doctor for them to do a food screening. BAM my body and gluten are not friends hence the abdominal pains. I had tons of vitamin deficiencies because I damaged my intestines so they weren&#8217;t absorbing nutrients. WAM I have an extreme case of insulin resistance so all my complex carbs I was eating were even a bad idea for me. </p>
<p>GI doctor &#8220;I&#8217;m sorry but you&#8217;ll have to be on a gluten free diet.&#8221;<br />
Metabolic Doctor &#8220;Your level of insulin resistance is extremely high. You must refrain from eating even complex carbs. No Grains, no potatoes, no concentrated sweets, and if you must have fruit no more than 1 1/2 cups a day.&#8221; </p>
<p>After feeling completely screwed by the food universe I decided lets look at my lovely blog and start documenting in hopes of helping others. I hope I come up with some recipes that will make my existence even better. Keep you posted.</p>

			<content:encoded><![CDATA[<p>Ok, how many times do we make the same goals year after year only not to keep up with them. The entire practice seems a little insane to me. We have life to beat us up enough why on earth add to it. So this year I have decided no resolution for me&#8230; just sane attainable goals I might be able to reach. They are completely short term and subject to change after my time frame is up.</p>
<p>Weight loss is a constant in my life. Yet there is no resolution for it in 2010. My short term goals will be geared to being a happier, healthier me. Starting Monday, January 4, 2009 I will be living by menu for 4 weeks and sharing it with you. What will the results be? Can I keep up? Will it break my bank account to eat low carb? Will the food be redundant? I am putting my journey out there for all to read completely honestly, I hope you take an interest and we&#8217;ll see where it goes.</p>

<li>Preheat oven to 450 degrees and lightly grease or apply PAM to large casserole dish</li>
<li>Toss cauliflower in oil and minced garlic coating well placing in dish</li>
<li> Cover with aluminum foil and bake 25 mins stirring halfway through</li>
<li>Uncover, stir,  and top with parsley &amp; pecorino romano then broil 3-5 mins until golden</li>
<li>Salt &amp; Pepper to taste and serve</li>
</ol>
<p>At 6 servings its around 125 cal and 5 carbs</p>
