Shred spinach with knife, rinse, place in microwave safe bowl, and microwave 1 1/2 minutes , drain liquid, place in mixing bowl<br />
Use a fork to mix all ingredients minus the olive oil.<br />
Spoon tablespoons of the mixture onto the baking pan yielding 18 meatballs. Lightly brush with olive oil and then roast for 20 minutes.<br />
Add to your favorite sauce and serve with zucchini noodles, spaghetti squash, or dreamfields pasta</p>

			<content:encoded><![CDATA[<p>Ok, how many times do we make the same goals year after year only not to keep up with them. The entire practice seems a little insane to me. We have life to beat us up enough why on earth add to it. So this year I have decided no resolution for me&#8230; just sane attainable goals I might be able to reach. They are completely short term and subject to change after my time frame is up.</p>
<p>Weight loss is a constant in my life. Yet there is no resolution for it in 2010. My short term goals will be geared to being a happier, healthier me. Starting Monday, January 4, 2009 I will be living by menu for 4 weeks and sharing it with you. What will the results be? Can I keep up? Will it break my bank account to eat low carb? Will the food be redundant? I am putting my journey out there for all to read completely honestly, I hope you take an interest and we&#8217;ll see where it goes.</p>

			<content:encoded><![CDATA[<p>I&#8217;m an Atkin&#8217;s Fan and big believer in the need for Induction so we can jump start our bodies into diet induced ketosis, the burning of our bodies stored fat for energy. Atkins Induction calls for a maximum of 20 carbs a day for 2 weeks. They have a suggested food list which you can find on their website. It consists of Lean Meats, Low Carb Veggies, and No Fruit. The good part is you ween yourself off any addictions to sugars or carbs.</p>
<h2><strong><em><span style="color: #800000;">This Fat Black Chick&#8217;s Induction</span></em></strong></h2>
<p>I&#8217;ve tweaked induction for me.  The bottom line is 20 Carbs (I do stay within the Atkins acceptable list of veggies for 2 weeks, then progress up, I like the structure), a fiber supplement, vitamin, Four 16.9 oz bottles of water, any thing diet or sugar free to drink, plus 3 meals and 3 snacks a day.</p>
<p>Here&#8217;s a sample day&#8230; hint raw cauliflower is really filling &amp; beware of serving sizes</p>

			<content:encoded><![CDATA[<p>Hey, everyone sorry for the delay. Last month was the one year anniversary of my mom passing away from Lung Cancer. It was truly a rough time. I must admit I fell victim to emotional eating. A full month of eating in a quest to feel better. Talk about damaging. I can physically look at my middle and see the added pounds. Carmel Lattes and drive thru windows are NO ONES Friend. Hopefully next year I&#8217;ll be able to tackle things a little better. With the Holiday Season around the corner I plan to wrestle emotional eating head on.</p>
<ul>
<li>I&#8217;ll take a route that involves as few drive thru windows as possible</li>
<li>I&#8217;ll read when I need something to do not munch</li>
<li>When I feel really down I will work out to get the pleasant feeling of the lovely endorphins released</li>
<li>I&#8217;ll pamper myself with a massage to remind me to take care of me</li>
<li>I&#8217;ll remember how far I&#8217;ve come in my weight loss and how far I want to go</li>
</ul>
<p>Hopefully the things I try might help you as well. Only time will tell.</p>

It’s a syndrome that often manifests itself in different ways depending on the individual. The symptoms are varied and many doctors are ill informed resulting in misdiagnosis.</p>
<p>This syndrome is <span style="color: #800000;">Polycystic Ovary Syndrome (PCOS)</span>, the most common hormone imbalance in women of childbearing age.  <span style="color: #800000;"><strong>PCOS </strong></span>has a long list of characteristics that not every person living with it will have, hence the term syndrome not disease. Three women suffering with <span style="color: #800000;"><strong>PCOS <span style="color: #000000;"><span style="font-weight: normal;">m</span></span></strong></span><span style="color: #000000;">igh</span>t not share all the same symptoms yet they all have it. Here are some indications you may have it:</p>

<li style="text-align: left;">Insulin      Resistance</li>
<li style="text-align: left;">High      Blood Pressure</li>
<li style="text-align: left;">Acne</li>

<p>Don’t worry there is hope. Surprisingly the best way to address it is simply through a diet low in carbohydrates with a low glycemic impact approach, combined with exercise. Also, medication is prescribed in some cases when needed.</p>

It seems to me designers rarely take a body type like mine into consideration when designing plus size clothes. I have a waist, GASP!!! Even though I carry a lot of my weight in the middle I have this Booty which makes my waist more prominent.  So everything gaps around the middle sometimes a good 4 inches that a belt can&#8217;t fix.</p>
<p>So I just grabbed a pile jeans not looking at sizes and marched to the fitting room head down preparing for fat girl torture, facing myself in huge retail store mirrors that <span style="color: #ff0000;">NEVER</span>, I repeat <span style="color: #ff0000;">NEVER</span> seem to flatter! After what seemed like ages I found a pair of jeans with about a 2 inch gap in the waist, the hugged my thighs that bubble out in the front just the right amount to suck them in, and of course were boot cut to hold my muscular calf.</p>
<p>I picked up the tag to check the price and was stunned to see the size <strong>24W </strong>staring back at me. Some how my thick size 14 body had been replaced with <strong>a freaking 24W.</strong> Stunned into a zombie stage I bought the pants got home and just stared in my mirror. I took out what once was my favorite dress years ago holding it up to me. I was almost twice my size. My face was fat, hair thinning, adult acne was every where,  &amp; stretch marks were on my arms and belly. <span style="color: #ff0000;">What in the world had happened to me!!!</span> Life hadn&#8217;t placed me where I felt I belonged, I was in a relationship that was trying, and<span style="color: #ff0000;"><strong> I was FAT, 282 lbs!!! </strong></span>I vowed then a change was gonna come.</p>

Yeah, I know <span style="color: #ff0000;"><span style="color: #ff0000;">IMPOSSIBLE!</span> </span>I was searching for a blog or website by a fat black chick like myself that was working on improving herself inside and out. Bam!!! Brick wall!!! The lovely Google genies failed me. I found lots of blogs and sites geared towards weight loss but time after time the face staring back did not reflect my own. Now I know that weight loss is rarely looked at from a racial perspective as far as approach, but I have learned it needs to be sometimes. For mainly one reason, the worse four letter word in regards to shedding pounds<span style="color: #ff0000;"> </span><span style="color: #ff0000;">FOOD!!!</span></p>
<p>Growing up on fried chicken, collard greens, corn bread, mac &amp; cheese, peach cobbler, and sweet tea makes dieting a bit hard. Our taste buds have been conditioned to love lots of flavor. Well <span style="color: #ff0000;">NEWS FLASH:</span> most diets are full of tasteless menus. BLAH!!! I want to see someone dieting without the torture of constant bland food. I want to see someone getting healthy not to be a size 4 but a shapely women proud of her curves. I want to see someone constantly learning and challenging who they are. Hell, I want to see ME!</p>
